on September 13, 2017 No commentsThis Saturday 9/16 from 11:30am-4:00pm at the Brewery we have cans of Fractal Simcoe. $16 per four pack, limit 1 case per person. Fractal Simcoe pours hazy-straw yellow releasing aromas of passion fruit, bright pine, berry, and earth, followed by some bready notes. The taste is a creamy pine flavor supported by tropical notes and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Simcoe” warranted indeed. 6.8% ABV. We also have Bottles of Welcome to the Jungle, $9 each 1 case limit per person and Bottles of Casey $10 per bottle 6 bottle per person, limits subject to change.

on September 7, 2017 No commentsThis Saturday 9/9 at our brewery from 11:30a-4p, along with cans of Fluctuation, we will be releasing our new wild ale. Welcome To The Jungle is our introductory wild wheat ale inspired by the idea of introducing more people to this enjoyable style of beer. Using a wheat forward grain bill, we took our “honey badger” lacto culture from TABA and combined it with the lacto from Casey which work in concert to shape this delicate ale. The aroma is wheat, bright tropical pineapple with a touch of lemon. With flavors similar to the aroma, this 3.8% ABV wild ale drinks light and effervescent. $9 per bottle, 1 case per person. ???? @nomsandbeer

Fluctuation pours a very hazy tangerine color, releasing bright tropical notes of passion fruit, mango, pineapple, and lychee with an undercurrent of sorbet and cream. Fluctuation tastes highly resinous and tropical with an assertive yet soft bitterness. We consider Fluctuation to be perfectly unbalanced. ????@nomsandbeer
Fractal Mosaic, dHop1 & magnums!
on September 1, 2017 No commentsAnother busy and exciting day at the brewery. Canning up Fractal Mosaic for tomorrow’s dual can release. It just went on tap in Grille for pours and will be available at 4pm in taproom for growlers.
Also brewing a new DIPA in the new dHop series (no more Hoptimization). It’s a 8% wheaty DIPA featuring a blend of 5 hops.
We got some magnums in today to start filling a few during each bottling run. Casey Passionfruit will be the first to utilize them and the last beer named Casey (another name change). Should see that beer in October.
