Cosmic Congruency

Cosmic Congruency is an Imperial Stout we worked on with Derek when he visited months back. It is made with Cacao nibs, Vanilla, Coconut, Marshmallow, and a touch of lactose. As depicted on the label, our goal was to make an out of this world balanced stout with some of both breweries favorite and congruent adjuncts that coexist harmoniously in this stout and at a cosmic level. Cosmic Congruency pours pitch black with a fluffy quickly dissipating head. Aromas of thiccc fudge and sweet vanilla arise before flavors of bakers chocolate, gooey marshmallow and balanced coconut wrapped up in vanilla swirls. Decadent and creamy, Cosmic Congruency shows balance and restraint across at the bored before giving you a harmonious finish.

Fractal Lab Nelson / Citra

Fractal Lab is a series with our simple fractal grain bill that explores beyond simple hop expression and applies experimental techniques to hops we want to know better.
Nelson and Citra is next up in the series. We used both in the whirlpool and dry hop while applying our energy process for a fractal-based IPA.
Fractal Lab Nelson / Citra pours glowing yellow and gives off notes of passionfreuite, white grape, tangerine, limeade, and stone fruit during a picknick in the New Zealand Grasslands with a flavor profile loaded with notes of citrus, peach, pineapple gummies and grass with a slightly resinous but creamy finish with a touch of pointed bitterness.

Fractal Citra pours a hazy-straw yellow releasing aromas of bright tropical passion fruit, pineapple, lychee, and hint of mango (complex). The taste is resinous pineapple juice with a slightly creamy mouthfeel and a firm but rounded bitterness. This medley of characteristics makes the name “Fractal Citra” warranted indeed.

Chardonnay Barrel Aged Unlikely Foragers

Brewed in 2019 right after our yearly dandelion blossom forage, we let this beer sit in Chardonnay barrels for almost a year. Following its transformation, we further conditioned it for 3 months prior to its release. The resulting liquid pours golden yellow with a billowy head. It is delicate and beautifully balanced with layered flavors of lemon peel, apple, pear, and oak with a restrained acidity and a lovely pleasant funk. The mouthfeel is coating and creamy with a medium body that is gentle and soft, fully dry, and a finish that is lightly tart. There will be more barrel-aged kin to follow in the coming weeks!

Morning Haze

Today, we will sell Morning Haze (8% DIPA) at $20 per 4-PK, no limit. This DIPA is the latest Addition to our Project Elevate Series and features a high-level view of new times starting after rising above the Morning Haze. Morning Haze is an aggressively hopped Galaxy/Mosaic DIPA with wheat and oats. It pours a hazy tangerine orange and releases bright notes of pineapple and blueberry with an aroma that mirrors the balanced taste. This beer is very crushable and has a beautiful fruit finish from out #EQjuice. It’s designed for late night celebrations, letting loose, and hitting the snooze on alarm clocks while keeping an optimistic perspective and looking forward.

(Please follow individual State limits for delivery). First thing is first! Yes, We made a big stout with Kyle and that will be here in a few weeks!
The brightest star in the constellation Aquila, Altair, is also known as the Eagle star. Located 16.7 light years from Earth, it’s the 12th brightest start in the night sky and it is one of the closest stars visible to the naked eye.
Following up on our first beer with Horus, Aquila; we scaled things up to a TIPA using our SOTL process. We started off with a heavy wheat base paired with an intense whirlpool of Citra, Mosaic, and El Dorado with a dry hop of Citra, Mosaic, El Dorado, and our favorite crop of Galaxy yet.
Altair pours a hazy and vivid yellow and has an aroma of citrus, pear, fruit cocktail, and papaya. The flavor is blended pear, orange, mango, papaya, and ripe melon; repharased: Five Alive juice drink with a grassy lime component that pops with each sip. This beer is soft and delicate for is size and our rainbow melon #EQjuice finish is waiting for you. It’s an easy drinker and will have you seeing stars quickly. Please enjoy responsibly while you gaze into the night sky tonight!

Lupo Lab Mosaic

Today, we will continue our Mosaic theme with the sale of Lupo Lab Mosaic (8.0 % DIPA) $20 per 4-PK, no limit. Next in our Lupo Lab series, we used an experimental concentrated Mosaic lupulin product, LUPOMAX Mosaic, from our friends John I. Haas, Inc. The benefits of LUPOMAX is the concentrated hop character without adding negative aspects of overusing hops. Lupo Lab Mosaic uses our fluctuation grain bill (same as the las Lupo Lab release) and an all mosaic hop bill with a 100% LUPOMAX Mosaic dry hop to help intensify a hop we already enjoy.
Pouring a deep murky yellow color, Lupo Lab Mosaic offers notes of dank and more dank with dank navel orange, berry, and fresh cut grass. Intense and saturated flavors of juicy citrus, ripe melon, and notes of a berry medley component await with heavy earth berry and touch of pine. This beer is aggressive and soft at the same time with an escalating juiciness builds into a #EQjuice finish.

The next dHop is here. This uses a special Haas pellet in between a normal T90 and LUPOMAX. Based on this processing of the hop cone, we felt that this beer would play very nice with our Energy treatment to further extract the deliciousness that this hop could offer. dHop 26 pours a vivid yellow with an aroma of bright citrus, earthy grass, and blueberry. Flavors of bright orange, red currants, and assorted berry lead with a touch of floral earth that morphs together into a beautiful representation of the Mosaic hop. Light and easy to drink, an escalating rainbow melon #EQjuice finish builds up to a great finish.

Project Blue Mountain

This Wednesday, 9/09, at 11am on Eventbrite, we will sell our longest Barrel Aged Stout to date conditioned with some very special Mostra Coffee : Project Blue Mountain (13 % ABV ) $28 per 500ML bottle. We took our two favorite barrels of the base stout that eventually became Swiss Bliss and allowed them to further mature for a total time of more than 17 months to meld and develop with oak, char, and its former Buffalo Trace occupant. Our relationship with Mostra sparks creativity. We have worked on beers, beans, experiences, and events together and embrace the true art of collaboration being producing something more than the sum of its parts. When Mike asked us if we had just the right BA stout to showcase some of his rare coffees, we immediately said YES. We selected a single barrel of our pair to add just one thing: Mostra Jamaica Blue Mountain Coffee. Getting its name from the misty skies, the Blue Mountains of Jamaica are some of the highest in the Caribbean. With an elevation over 7,000 feet, the climate of the region is cool and misty with high rainfall. The soil is rich, with great drainage. This combination of climate and soil is considered ideal for growing coffee, making it one of the most expensive and sought-after coffees in the world.
The opportunity to obtain these beans was special and we and felt the need to respect the ingredient a much as possible in order to let them shine. This beer is a culmination of time, trust, friendship, collaboration, barrel, and coffee. Project JBM pours a thick pitch black with a tan head. Notes of creamy chopped bakers chocolate, caramel, barrel-genesis marshmallow, oak and bourbon, are interwoven with a full, sophisticated, rich, nutty coffee aroma that waft up from the pour. Flavors of decadent fudge, full bodied pure drip coffee, and American oak are integrated into a silky and luxurious mouthfeel with backend flavors of tobacco and leather, in a great barrel forward finish that maximizes flavors in a straightforward manor.
Please enjoy close to room temperature and enjoy fresh!

Breaking Enigma

Cracking the very cryptic Enigma Code was an important moment in world history. Here, we try to do the same on a brewery level with a hop some refer to as the chameleon hop, Enigma. Using different methods during the dry hop we work to pull out unique flavors you may not find using standard techniques.
Breaking Enigma uses wheat and oats as a grain base and is then heavily hopped with Enigma and a touch of Citra for balance. This beer pours bright yellow and has aroma of tropical fruit, berry and stone fruit. Upon tasting, we get assorted berries, tropical fruit, citrus, and a touch of Pinot Gris. The beer is resinous with a great blend of #EQjuice and dank earth at finish.
