Ours Beers

Our beers are created using the principle of “Mass Balance Brewing,” which focuses on the sources and sinks of different flavors to maximize and balance the right flavors in your glass. Each style of beer (IPA, Farmhouse Ale, Porter/Stout) has unique elements of process and ingredient that has been optimized in this regard.

Next Day IPA

Next Day IPAs are ambitious and challenging to make. They deliver the juicy hop aroma and flavor of a bigger IPA, but we strive to keep the alcohol below 5% so that you can enjoy several in a session. The idea being to fully enjoy your drinking experience, yet still get your work done the next day due to the low alcohol content.

IPAs/DIPAs/TIPAs

IPAs are brewed using novel hopping processes that maximize extraction of flavorful and aromatic compounds from hops, while minimizing the contribution of harsh components that traditionally limit the application of hops for developing massive and complex flavor in beer.

Farmhouse Ales

Farmhouse Ales are complex in creation yet simple in enjoyability. They use a minimum of six different microorganisms and use unique brewing steps to maximize the production of delicious and funky farmhouse flavors from the various classes of microbes. These are bright, crisp, and refreshing, pair wonderfully with local fruit, and are naturally carbonated.

Stouts/Porters

We’ve gone through great lengths to refine our process in these beers. The result is a rich flavor and creamy mouth feel, showcasing decadent flavors yet minimizing the harsh taste that dark grains can often leave behind. The creamy mouthfeel does not come at the expense of being cloyingly sweet to aid in its drinkability.

NEXT DAY IPAs

Photon

Photon is our light and crushable American Pale Ale loaded with pacific northwest hops. It pours a very hazy orange, releasing well-blended notes of apricot, tangerine, peach, mango, and pineapple. It tastes of soft juicy tropical fruits, hop resins, and a hint of biscuit. A smooth rounded bitterness with a touch of dryness ensures you’re ready for the next sip. This drinking experience is further enhanced with a soft and billowy mouth-feel that has made this the go to ale for the EQ crew, especially when a productive day needs to follow a fun night.

Mmm…osa

Mmm…osa is our beloved Photon American Pale Ale conditioned on freshly zested oranges at a rate of 6 oranges per bbl. It is everything photon is, with a stronger orange presence; this citric delight is our preferred way to start the afternoon.

Photon Citrus

Photon Citrus is our beloved Photon American Pale Ale conditioned on fresh grapefruit, lime, lemon, tangerine, and orange zest. It is everything photon is with a balanced touch of citrus; this citric delight is perfect to welcome the summer weather.

IPAs / DIPAs / TIPAs

mc²

mc² is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. mc² tastes like succulent mango juice loaded with chewy hop resins. It’s very drinkable for 8.0%; be careful, this one can sneak up on you.

Vulgar Display of Flower

Vulgar Display of Flower is a tribute to an aggressive yet balanced assault on the senses. It blends East and West coast DIPA with our own Equilibrium twist. It is dry, bitter, piny, resinous, yet smooth, juicy, and drinkable. This concoction displays the hop flower’s assertive yet delicious nature.

Fractal Citra/Mosaic

Fractal Citra/Mosaic investigates the interplay between Citra, Mosaic, and our slightly revised processes. Fractal Citra/Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, passion fruit, earthy grass, and tropical melon. The taste is resinous, dank pineapple juice, touch of pine, and ends with a slightly creamy mouthfeel and a firm but rounded bitterness.

Fluctuation

Departures from Equilibrium are known as fluctuations. Fluctuation pours a very hazy tangerine color, releasing bright tropical notes of passion fruit, mango, pineapple, and lychee with an undercurrent of sorbet and cream. Fluctuation tastes highly resinous and tropical with an assertive yet soft bitterness. We consider Fluctuation to be perfectly unbalanced.

WILD ALES / FARMHOUSE ALES

There And Back Again Apricots and Peaches

There And Back Again is a tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This sour American Wild Ale is a collaborative effort with our dear friend Dr. Jason Rodriguez. We took our house “honey badger” mixed culture (no saccharomyces) and allowed it to ferment and sour over several months before refermenting it on apricots and peaches (> 2lbs of fruit per gallon) for additional months. The result is a bright stone-fruit character boosted by the tropical expression of our microorganisms. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Austin Boysenberry

Austin Boysenberry is one of the finest farmhouse ales we’ve produced to date. Austin is a farmhouse ale built by the inspiration to share beer with people close to heart. It is pale, tart, delicate, and complex with a bit of pleasant funk. Austin was then refermented on boysenberries at a rate of more than 2 lbs of fruit per gallon for additional months. The result is a bright jammy-fruit character boosted by the expression of our microorganism. This beer has a beautiful drinkable balance from the heartiness of the boysenberry and the dryness of the base ale. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

There And Back Again Raspberry

There And Back Again is a tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This sour American Wild Ale is a collaborative effort with our dear friend Dr. Jason Rodriguez. The result is a bright raspberry character boosted by the tropical expression of our microorganisms.
