Paradise City Pineapple/Lychee/Peach

on January 17, 2019 No comments

This Saturday 1/19 from 11:30AM – 6PM, at the brewery, we are thrilled to offer our second Wild Ale Collab with @otherhalfnyc : Paradise City Pineapple/Lychee/Peach (5.5% ABV) at $18 a bottle, limit 6 bottles a person.

We brewed this beer with Sam back in June by supersizing Equilibrium’s Welcome to the Jungle grain bill and fermentation, adding a new Brett strain, and aging the beer for months on copious amounts of Pineapple, Lychee, and Peaches. We are pleased to pay homage to NY as one of the great adult playgrounds in the North East: Paradise City. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Hop Wave 6

on January 16, 2019 No comments

This Saturday 01/19 from 11:30am-6 pm, at the brewery, we are pleased to introduce Hop Wave 6 (8.0% ABV DIPA). $20 per 4-pk, 1 case per person.

We took dHop 6 which is is the closest thing we make to DDH MC² and added a touch of lactose. Hop Wave 6 pours very hazy tangerine color with a taste and aroma of dank and bright tropical mango, apricot, earth, pineapple, berry, with a touch of weed. With an extremely high level of “EQ Juice”, this beer is extremely bright and juicy. The juice builds up on finish along with a creamy sorbet ending, reminiscent of a tropical creamsicle.

More to come!

Governing Forces

We are pleased to introduce Governing Forces (8.0% ABV) this Saturday 01/19 from 11:30AM – 6PM, at the brewery. $20 per 4-pk, Limit 1 case per person, limits subject to change.

Governing Forces is our follow up to dC/dt and is the most technologically advanced DIPA we’ve made to date by reexamining the basic properties of our new hardware. We’ve made several refinements to our new setup to bring more aroma and EQ juice into this beer. Governing Forces received a healthy dose of citra and amarillo supported by a mixed grain bill.

Governing Forces pours a glowing tangerine and has aromas of tropical orange zest, melon, and a distinct tropical character of EQ juice. The flavor is orange smoothie, melon for days, and dank grass with a gummy resinous character that makes your mouth chew if you man up and take a full sip. This all balanced by a soft bitterness to keep you going sip-after-sip.

Fractal Citra/Belma

This Saturday, 1/12 from 11:30am-6 pm at the brewery, we are pleased to introduce cans of Fractal Citra/Belma (6.8% ABV). $16 per four pack, limit one case per person.

One of our most interesting hop combinations yet, Fractal Citra / Belma pours a resinous hazy yellow releasing intense aromas of citrus, lime and tropical fruit along with strong notes of strawberry. The taste is resinous and a mix of citrus fruits and assorted berries with our signature EQ juice finish. We found this hop combo to be really fun and reminiscent of one of our favorite kiddie cereals growing up.

Straight Outta Middletown

on January 9, 2019 No comments

This Saturday 1/12 from 11:30am-6 pm, at the brewery, we will be selling cans of Straight Outta Middletown. $22 per four pack, limit one case per person.

Straight out of Middletown (10% ABV) is dHop2s big brother. dHop2 is a DIPA that investigates the interplay between our ale strain and an intensive Mosaic and Citra forward hop bill woven four times into its creative process. It pours a very murky tangerine color, releasing notes of orange juice (with pulp) and earthy grass. The taste is highly resinous, dank-citrus, pine juice, with a chewy mouth feel and a firm and pointed bitterness along with our signature EQ Juice finish.

dC/dt

This Saturday 12/29 from 11:30AM – 6PM, at the brewery, we are happy to introduce dC/dt (8.0% ABV) at $20 per four pack. Limit 1 case per person, limits subject to change.

dC/dt is the most technologically advanced DIPA we’ve made to date. It utilizes new hardware in unique ways to bring you a beer that’s on the same level as SOTL and Adrestia. Introducing Mass Fluxes into a Control Volume leads to a change in concentration over a change in time or dC/dt, which allows for the construction of a predictive juice model. The gold line on the label is the actual calibrated mathematical model of the EQ juice compared to data in “Relative Yuminess Units” provided by the expert palates of Ryan and OG Kyle. To test the insight gained by this model, which suggested new hardware, we supersized an old favorite: Fractal Citra. The ingredients: Pale Malt + Citra. This DIPA underwent our fractal fermentation (the backbone of dHop5) and received large doses of citra hops in this brand new process. dC/dt pours a hazy straw yellow and has aromas of freshly squeezed OJ, melon, lime, grapefruit, and a tropical character that gives you a vacation in a glass. The flavor is bright tropical orange juice, mango smoothie, dank grass, with a gummy resinous character of that melon thing that dances on the pallet, all balanced by a soft bitterness to keep it refreshing sip-after-sip.

We are pleased to introduce The Middletown Project (8.1% ABV DIPA) this Saturday 12/29 from 11:30AM-6PM at $20 per four pack. Limit 1 case per person, limits subject to change.

The Middletown Project is our on going effort to create our perfect hop bomb. It utilizes a new piece of technology that we think will be important to this effort. We blended 4 of our favorite hops into this new process. We taste dank berries, bright orangey citrus, cream, and melon. The flavor follows the nose with a clean dose of our signature EQ juice. We’d like to thank Middletown for giving our project a home and all Veterans for giving us the freedoms we enjoy today. Shout out to Grampa.
