Head Chef

Full Time

Essential Job Duties & Responsibilities

Customer Service

  • Our kitchen is located within our taproom; it is an open format which makes all cooking staff visible to customers. The Head Chef will be expected to occasionally engage with customers while performing cooking duties and maintaining quality standards.
  • The Head Chef will be expected to provide the same level of customer service to their co-workers as they offer to guests.

Responsibilities

  • Hire and train kitchen staff,
  • Set schedules for kitchen staff,
  • Responsible for ordering and overseeing inventory in accordance with kitchen budget,
  • Perform equipment maintenance,
  • Develop menu and set pricing,
  • Report sales and meet budget goals,
  • Conduct performance reviews of kitchen staff,
  • Maintain kitchen cleanliness, as well as understanding and enforcing all health, safety and sanitation regulations.
  • Maintain up-to-date knowledge of craft beer.
  • Perform all duties according to Equilibrium procedures
  • Support Equilibrium brewing staff, preparing special ingredients for adjuncting beer
  • Assist during private events and special releases as necessary
  • Collaborate with guest chefs and visiting brewers for special events

Additional duties may be assigned as necessary.

Desired Qualifications & Abilities

Experience

  • 5-7 years experience in a professional kitchen.
  • Looking for a candidate who can bring a sous chef with them.
  • Experience with live fire cooking on a parilla-style grill (preferred).
  • Experience with farm-to-table cooking and adapting menus based on seasonal ingredients.
  • Must have food handlers and safeserv certifications.
  • Experience with various forms of technology, different POS systems, time clocks, etc.

Lead Pitmaster

Essential Job Duties & Responsibilities

Customer Service

  • Our smoker will be a conversation piece in our beer garden.  We value our community and intend to make our beer garden an engaging and friendly environment for customers – a home away from home.  The lead Pitmaster will be expected to engage with customers while performing meat smoking duties and maintaining quality standards.  We are looking for a pit master who is able to effectively communicate about BBQ styles, the thermodynamics of a reverse flow smoker as well as the general smoking process.
  • The Lead Pitmaster will be expected to provide the same level of customer service to their co-workers as they offer to guests

Responsibilities

  • The Lead Pitmaster is responsible for maintaining kitchen and smoke pit cleanliness, providing continuous delivery of products, as well as understanding and enforcing all health, safety and sanitation regulations.
  • This position requires a great deal of knowledge on utilizing our smoker, a 108” Reverse Flow LANG, and must  have the ability to learn and master the “low and slow” Central Texas method of BBQ cooking.
  • The Lead Pitmaster must excel at cutting and trimming a variety of beef, pork, turkey and chicken products.
  • The Lead Pitmaster will oversee and train full and part-time Assistant Pitmasters.
  • Maintain up-to-date knowledge of craft beer.
  • Perform all duties according to Equilibrium procedures
  • Assist during private events and special releases as necessary

  • Minimum of 3 years professional smoking experience.
  • 5-7 years experience in a professional kitchen

Beertenders

  • Address guests’ service needs in a professional, positive, and timely manner

Bar Service

  • Memorize our food and beverage menus and make recommendations to our guests
  • Serve pours in accordance with Equilibrium’s quality standards
  • Operate and troubleshoot draft equipment and move and change kegs as necessary
  • Maintain cleanliness and organization of bar area
  • Open and close according to Equilibrium opening and closing procedures

  • Minimum 18 years of age
  • Cicerone Certified Beer Server (preferred)

Bussers

Essential Job Duties & Responsibilities

Bussers clean tables, taking plates, utensils and drinkware to the kitchen to be washed, clean and reset tables for the next customer. Bussers help restock glasses, utensils, napkins and assist with other taproom room needs as requested by Beertenders or Kitchen Staff.  Additionally, bussers help maintain the cleanliness of the taproom by sweeping floors and wiping up any spills to ensure that taproom floors remain dry.

Bussers aren’t the front line of guest service, but customer attentiveness and a neat appearance are still necessary. Bussers make sure that the beertenders can focus on the guests and make sure that the taproom is cleaned in a speedy and effective manner.  We are looking for Bussers who will:

  • Smile and maintain a friendly attitude toward customers,
  • Address guests’ service needs in a professional, positive, and timely manner
  • Provide the same level of customer service to your co-workers as you offer to guests

Dishwashers

Full or Part-time

We are looking for employees who possess positive attitudes, integrity, highly honed communication skills and a willingness to learn.  

In this position, you will maintain cleanliness and sanitation standards for glassware, tableware, cooking utensils, etc. using machine and manual cleaning methods.  You will also ensure the dishwashing area is maintained as a clean, safe, and sanitary facility.

Essential Job Duties and Responsibilities:

Dishwashing

  • Sort and rinse dirty dishes, glass, tableware, and other cooking utensils and place them in racks to send through the dish machine
  • Sort and stack clean dishes, carry clean dishes to cooks’ line and other proper storage areas, rewash soiled dishes before delivering
  • Change dishwater in dish machine every hour
  • Wash pots, pans, and trays by hand
  • Set up or break down dishwashing area
  • Fill/empty soak tubs with cleaning/sanitizing solutions
  • Assemble/disassemble dish machine
  • Notify manager any time dish machine wash or rinse cycle falls below safety standard temperatures

Maintain Cleanliness of Area

  • Remove trash and garbage to dumpster
  • Sweep/mop floors
  • Sweep up trash around exterior of restaurant and garbage dumpster
  • Conduct general taproom and restroom cleaning as directed
  • Wipe up any spills to ensure kitchen floors remain dry

Additional duties may be assigned as necessary.

Desired Qualifications & Abilities

Experience

  • Minimum 1 year dishwasher experience

  • Proper practice of sanitation and general hygiene

Office Assistant

Equilibrium Brewery is delighted to bring new jobs to Middletown, NY. We currently seek an Office Assistant to support day-to-day operations of our office. This position will report to the Operations Manager, and work closely with staff across production, sales, and marketing. The ideal candidate will be detailed oriented, a skilled communicator, and take a flexible approach to work situations.

Essential Job Duties and Responsibilities

  • Perform general clerical duties that include copying, scanning, mailing, and filing.
  • Assist with ordering supplies and ingredients.
  • Support key programs that make our office run, such as our inventory management software.
  • Help event staff with organizing materials and travel arrangements.
  • Record sales orders and prepare invoices.

Desired Qualifications and Abilities

  • Strong attention to detail with follow-through.
  • Must be able to work independently.
