dS/dt is the most technologically advanced DIPA we’ve made to date at any location. At Henry Street, introducing Mass Fluxes into a Control Volume leads to a change in concentration over a change in time or dC/dt, which allows for the construction of a predictive juice model. The gold line on the label is the actual calibrated mathematical model of the EQ juice compared to data in “Relative Yuminess Units” provided by the expert palates of Ryan and OG Kyle. We took the EQ Juice model derived from dC/dt and extrapolated it to produce more EQ Juice using new South Street hardware to bring you dS/dt.
The only ingredients in this beer are pale malt and citra. This DIPA underwent our fractal fermentation and received large doses of citra hops in this new process. dS/dt pours a hazy straw yellow and has aromas of freshly squeezed OJ, rainbow melon, lime, grapefruit, and a tropical character that gives you a vacation in a glass. The flavor is bright tropical orange juice, mango smoothie, dank grass, with a gummy resinous character of our rainbow melon that dances on the pallet, all balanced by a rounded bitterness to keep it refreshing sip-after-sip.

Raining Belma is one of the beers in our Heavy Metal Series. It starts with a base of oats and wheat and utilizes a mostly Belma hop bill with some support from Citra to round things out. Raining Belma pours a radiant yellow with an aroma of fresh cut oranges and assorted melon. Belma’s characteristics are flavors of strawberry, citrus, and grapefruit. Along with those flavors, you’ll get a juicy fruit forward melon #EQjuice finish in this batch.

Fractal Strata investigates the interplay between Strata and our revised hopping processes. A fractal is something simple at the core yet can produce wonderful and amazingly complex results. We use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques.
Fractal Strata pours a hazy yellow releasing complex aromas of both tropical and dank passionfruit, mango and melon with a whiff of sticky green. The taste follows the aroma with a resinous creamy mouthfeel and a firm but rounded bitterness.

dHop 24 is next up in our experimental series that investigates a new hop product to help our production. Flaked oats and wheat give way to a creamy base for the Sabro and BRU-1 whirlpool before dry-hopping it with Citra, Enigma, and BRU-1. dHop 24 pours a bright yellow and has aromas of fruit cocktail, pineapple, lime, honey dew melon, and earth. The flavor is a medley of citrus, pineapple, berries, and a touch of pinot gris. A concoction of luscious fruit awaits before a metamorphosis of escalating juice forward flavors building up into our rainbow melon #EQjuice thing just prior to a pointed but balanced bitter finish.

Tomorrow is a delicate 4.0% Citra and Mosaic American Pale Ale with a hefty dose of oats designed for a balance of immediate consumption at plans the next day. Pouring light yellow, we are excited with how this batch came out as it offers saturated flavors and well-blended notes of orange juice, mango, pineapple, and fresh cut grass. It tastes soft and tropical with a prominent #EQjuice finish and zero trace of astringency, making it our favorite crusher at the moment. This is the most EQJuice we’ve been able to pull at such a low ABV.

We have been enjoying a lot hoppy Marshmallow beers lately so it seemed appropriate to concoct our next Super Fractal Set with the fun textured and super tangled 3-D network of polymer chains of fluffy sweet treats.
Super Fractal Marshmallow Set takes our Super Fractal Fermentation process and a whirlpool of Citra and Simcoe and adds a dry hop of Citra, Galaxy, Simcoe, Sabro before finishing it off with a balanced amount of Marshmallow. SFMS pours a hazy tangerine color with an aroma of an orange push-up ice cream pop dipped in fluff and covered in skittles. Flavors of creamy orange, mango, papaya and a touch of lime come alive with flavors of rainbow skittles and a measured amount of fluffy vanilla marshmallow in a dangerously drinkable #EQjuice finish. The hidden ABV and nostalgic flavor profile will spin you right back to childhood..

Ph0phy² takes our collaboration with Tired Hands, Ph0phy, and scales it up to a DIPA and adds a new twist with an experimental hop favorite that Jean and Pete loved on their trip down under. Based off its pale ale counterpart, Ph0phy² uses a bigger base of 2-Row and Wheat and is hopped with a 100% Galaxy whirlpool. We then dry hopped it with a new experimental hop HPA 016 and a touch of Galaxy.
Ph0phy² pours a fluorescent yellow with an aroma of Five Alive fruit drink, clementine, mimosas, pineapple, and budding grass. It’s flavors are explosive of summer citrus mimosa cocktail with a clementine wedge on the rim of the glass, pineapple juice, and Australian grass blades all with a melon twist. Delicate, juicy and balanced, Ph0phy² is a fun one!

We are really excited about this new batch of Hop Wave 5. It is the first beer that uses the new harvest of Galaxy from Pete’s trip to Australia.
We are thrilled with the characteristics of this crop and what it contributes to the beer in both aroma and flavor and look forward to the many more delicious Galaxy-forward beers to come from this harvest.
Hop Wave 5 takes one of our favorite Citra/Galaxy DIPAs, dHop5, supersizes the hop charge and adds a touch of lactose. Aside from all the great things about this beer, it includes an experiment to boost the citrus character of its aroma. We will continue to apply this to the next several releases for evaluation but we’re very pleased with the effect.
Hop Wave 5 pours a milky straw yellow releasing pungent aromas of citrus, pineapple, passion fruit, and peach all integrated with a sorbet twist. The taste is a soft and bright creamy tropical flavor that is dangerously drinkable and balanced with a punch of our signature #EQjuice. Don’t sleep on this one!

Killer Aussie Pinecones is a beer that was conceptualized during a near death experience during Pete’s Aussie Adventure. Venomous snakes, crocodiles, sharks, and jellyfish are one thing, but if you’re traveling to the land down under, keep an eye above you for the Killer Aussie Pinecones! These watermelon size cones weigh up to 22 lbs each and can strike you with the weight of a bowling ball from 100s of feet above (See second pic for scale)
