Maybe we found a niche with this post, but it’s our opinion, not just this beer, but 2021 in general. Not saying 2020 wasn’t top of the chain, up there with the rest, just pump the breaks a little…let the Bert hurt begin.
Based off a scaled down version of a team favorite, Even More Unbalanced, we pumped the brakes to scale it down into a DIPA. Using an increased dry hop rate with some of our hand selected hops, this blend of Citra, Galaxy, Sultana, Mosaic, and Amarillo pours an intensely hazy tangerine color with a blast of bright tropical mango, pineapple, stone fruit and complex berry. The taste is blended tropical fruit with a fluffy tropical finish and a proper bitterness for balance. We Love(less) 2020 compared to this hop combo.

Fractal Citra / Idaho 7

Using an increased hop rate, this Fractal investigates the interplay between a new hop combination, Citra and Idaho 7, and our revised processes.
Fractal Citra/Idaho 7 pours a bright and resinous yellow releasing complex aromas of citrus and melon. The taste follows with additional citrus, peach flesh, cantaloupe, zesty lime and assorted berries with an earthy pine backbone. This beer is creamy but firm with rounded bitterness.

Super Fractal Mandelbrot Set

Today at Noon, we will sell, Super Fractal Mandelbrot Set (10.5% TIPA) at $22 per 4-pk, no limit. We will have this available with options for curbside pickup at the brewery or delivery throughout New York, Pennsylvania, Washington D.C., Ohio, Nevada, New Hampshire, Vermont, North Dakota, and Virginia.
The Mandelbrot Set is named after Mathematician Benoit Mandelbrot. It’s a set of complex numbers for which the function does not diverge and are bounded in absolute value. Following the previous Fractal Sets and continuing the series framework, we scaled up from Fractal using a super simple grain bill of 2row and our specific fractal fermentation profile before intensely hoping it with a Citra whirlpool and a dryhop of Sabro, Strata Galaxy, and Amarillo. This batch features an increased hopping rate and plenty of hand selected hops.
Super Fractal Mandelbrot Set pours a vivid hazy yellow with an aroma of tropical citrus and grapefruit. The flavor comes alive with decadent tangerine, peach, and berry with a touch of coconut and a zesty lime finish.
Dramatic fruit notes take the lead as a crushable and #EQjuice profile builds up into a smooth and creamy finish that will leave you seeing the biggest fractal reflections yet.

Elemental Gorilla is part of the Bottle Logic Trilogy we hope to bring you every 24 months. Using our own Vanilla Gorilla as the muse for this beer, we continued to build on the idea to focus on the basic Elements of a massive Imperial Stout: Barrel, cat-like patience, and focused adjuncts. The same giant base of Binary Elements was allowed to sit uninterrupted in Willet barrels for 18 months with the addition of Vanuatu vanilla beans. Grown on the southernmost island of the Vanuatu archipelago in the South Pacific, these wonderful and extremely rare vanilla planifolia beans give unique and strong notes of cookie dough and cocoa.

Elemental Gorilla with Vanilla pours pitch black with a deep tan head. Aromas and flavors of extreme chocolate chip cookie dough, bakers chocolate, and the most luxurious gooey vanilla fudge lead into a balanced barrel character of vanilla oak, light char, and complexity from the barrel in a chewy and sticky finish.

Ocean Physics spans from small millimeter-scale turbulence to big-scale global circulation (like the label) and even applies to fish tanks in your living room. For this beer, we payed attention to smallest detail while thinking of a big TIPA that you can enjoy in your living room and possibly in your fish tank if you have too many. Thanks Ocean Physics! We set out to make a triple as smooth as the most gentle ocean waves. Batch 2 of VitaminM(Sea)³ starts with a base of oats and wheat to help the beer remain soft and creamy before an even bigger hopping rate of Citra, Mosaic, Wakatu, and Galaxy than its predecessor. It pours a hazy and vivid bright yellow and has intense notes and flavors of assorted citrus, lemon & lime, and a dank and earthy lemongrass. It has big #EQjuice with an extremely soft smooth finish. It’s dangerously drinkable for a triple and will slip you into meditative state as you are reminded of the sounds of the sea as the ocean boost your brain power… or helps you drink in a fish tank.

Batch 3 of Can It Be All So Simple arrives today. Revisting this beer in its OG form, we turned off the EQjuice and brewed it just like the first time around. Using our Hand Selected Galaxy and Mosaic hops, we generously upped the hopping rate of previous batches so this beer sings. Pouring a hazy and quite vivid yellow, CIBASS releases bright notes of Dole pineapple juice, tropical citrus, and blueberry with an aroma that mirrors the balanced and drinkable taste.

As a special holiday treat, we did a small batch of our beloved porter with adjuncts for the first time to bring you a lower ABV option of some delicious flavors. Möbius with Peanuts and Marshmallows takes our base American Porter and conditions it on two of our favorite adjuncts. Pouring dark black with a tan head, you’ll notice a huge peanut butter nose along with big roasty chocolate flavors from the Möbius specialty malts. These flavors are tied into a peanut butter element and a creamy marshmallow mouthfeel. This porter is light and very soft but balanced enough to be flavorful and not cloyingly sweet which helps to aid in its drinkability.

Fractal Mosaic

A fractal is something simple at the core yet can produce wonderful and amazingly complex results. The fractal series uses only pale malt and hops, and for the first time we used our hand selected Mosaic. We use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, earthy grass, blueberries and tropical melon. The taste is highly resinous, piney, juicy, with a slightly creamy mouthfeel, and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Mosaic” warranted indeed.

People have asked over the years why hasn’t there been a base Austin? The answer simply is it hasn’t been ready yet. It plays well with fruit and oak, but it hasn’t been ready as a standalone. Like our stouts, we’ve been working hard behind the scenes to create a reproducible process that produces a beautiful and elegant farmhouse ale that is dry, slightly tart, full of flavor, and super drinkable. The interplay of our slow souring process, its respective microorganisms, hops, bitterness, gravity manipulation, and minerality has been through countless iterations over the years from different engines of Casey, Fruited Austin, TABA, DH TABA, and we’re pleased to announce that after years of RnD we finally have it dialed in and base Austin is ready. This ale while deceptively simple is one of our largest accomplishments to date. Austin has a similar elegant acidity of our recent DH TABAs, similar final gravity, but uses completely different microorganisms for fermentation, different hops, and hop process.
Austin is a farmhouse ale built by the inspiration to share beer with people close to heart. It is pale, tart, delicate, and complex with a bit of pleasant funk. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Originally dreamed up at Evil Twin NYC while talking with Jeppe, the conversation of hops, marshmallows, and what if’s started us off with a test batch of Straight Outta The Marshmallow Laboratory. It was served both at Equilibrium and Evil Twin and after some great feedback and slight tweaks to the original recipe we decided to package it.
This batch features an increased hopping rate of our hand selected hops and we worked hard to really integrate the marshmallow flavor with the tropical notes from the hops while reducing the marshmallow sweetness in a revised process from the pilot batch. We are really happy with the result. SOTML pours a hazy orange and notes of orange marshmallow creamsicle immediately fill the air when cracked open. The flavor follows with bright tropical fruits infused with pillowy marshmallow and creamy vanilla notes. The beer finishes soft and velvety with a beautiful #EQjuice profile.
