Starting this Saturday 12/9, We are extending our hours during Saturday releases at the request of some of our customers who plan on attending releases by some of the other great breweries in the Hudson Valley. This should hopefully help give people a more relaxed window to have a mini “beercation” on Saturdays. In general, we have finalized the installation of our crowler machine and will have crowlers available this weekend, Saturday 12/9 (11:30am-6pm) and 12/10 (11am-3pm) and plan on being open going forward starting Thursday 12/14 with the following hrs:
In addition to our collaboration with The Answer, this Wednesday 11/22 we have bottles of Casey Passionfruit for sale from 10AM- 12 PM and from 3 PM – 5PM at the brewery for $18 per bottle, 6 bottles limit per person, limits subject to change.
Casey Passionfruit is a sour farmhouse ale built by the inspiration to share beer with people close to heart. She is pale, sour, delicate, and complex with a bit of pleasant funk. Casey was refermented on passionfruit at a rate of more than 2 lbs of fruit per gallon for several months. The result is an intense passionfruit character boosted by the expression of our microorganism. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.
Thanksgiving is a moment to gather, be thankful, and share things with people close to heart. We asked. We took a poll. We listened. As a result, this Wednesday 11/22 we are going to SPLIT our release to make the most people the most happy. We are going to take our allotment of cans and bottles and split them — to be released at both 10am-12pm and 3pm-5pm. We will treat this like two separate releases; i.e., two Saturday-style events but closer together.
The first beer we’re going to release is “Can It All Be So Simple,” which is our first collaboration with The Answer at $20 per 4-pack, 1 case per person, limits subject to change. This is a 8.2% DIPA brewed with Galaxy and Mosaic. Our friend, Brandon, from The Answer came up to brew with us. We shared unique brewing philosophies and made them synergistic to construct this DIPA. It pours a hazy tangerine orange and releases bright notes of pineapple and blueberry with an aroma that mirrors the balanced and drinkable taste.
This Saturday 11/18 from 11:30am-4:00pm at our brewery we will be selling dHop1 and MC². $20 per four pack for dHop1 $18 per four pack for MC² One case per person of each, limits subject to change.
dHop is our DIPA series that investigates how changing different aspects of hops changes our DIPAs, which will allow us to optimize our hops and hopping procedure. dHop1 is our 8.5% DIPA with an intense mosaic forward hop bill. This is the second release of this beer and we’re very excited about this batch. Applying what we’ve learned from this series, we were able to pull more brightness and blueberry from mosaic than ever before. It pours a very murky tangerine color, releasing notes of bright blueberry, dank-citrus, more dank-citrus, earthy grass, tropical melon. The taste is a juicy piney blueberry, with a chewy mouth feel and a firm but rounded bitterness.
MC² (8.0% ABV) is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. MC² tastes like succulent mango juice loaded with chewy hop resins.
