We are pleased to add two new beers to our line up for national beer day: 1) Fractal Simcoe part of our 6.8% IPA fractal series (pictured left); and 2) Perturbation Mosaic the debut of a different experimental 6.5% IPA series (pictured right). Fractal Simcoe pours hazy-straw yellow releasing aromas of passion fruit, bright pine, berry, and earth, followed by some bready notes. The taste is a creamy pine flavor supported by tropical notes and a firm but rounded bitterness. The menagerie of characteristics makes the name “Fractal Simcoe” warranted indeed.
While the fractal series has only pale malt and a simple hop bill to investigate how different hops manifest through our processes, the Perturbation series starts with a more complex malt bill, water treatment, and fermentation that we consider at “Equilibrium” and makes a simple change or “Perturbation” to the beer to investigate the impact to the drinking experience. For Perturbation Mosaic, we shifted all the hops to Mosaic. We taste both dank and bright citrus, berry, peach, grassy earth, and touch of sweet that’s balanced by a smooth bitterness. The aroma mirrors the taste allowing the interplay of mosaic and a well-balanced beer to be enjoyed.
