Harvester of Waves

This Saturday 10/27 from 11:30am-6pm at the brewery, we are happy to introduce the next beer in our Wave series, Harvester of Waves. $20 per four pack, limit 1 case per person (limits subject to change).

Harvester of Waves (8.5 % DIPA) takes our head brewer Ryan’s favorite beer and adds a touch of lactose. You’ll find elevated aromas of passion fruit, bright pine, berry and earth. The taste follows with light pine and tropical fruit in a creamier form than its predecessor while the lactose adds a smooth creamy sorbet finish.

This Saturday 10/27 from 11:30am-6pm at the brewery, we are happy to bring back Harvester of Simcoe. $20 per four pack, limit 1 case per person (limits subject to change).

Harvester of Simcoe (8.8% DIPA) has aromas of passion fruit, bright pine, berry and earth, followed by some bready notes. The taste is light pine and tropical fruits supported by a firm but rounded bitterness and our signature EQ juice finish.

Beard of Jupiter

This Saturday 10/20 from 11:30AM-6PM at the brewery we will be selling cans of our collaboration with Civil Society Brewing, Beard of Jupiter at $20 per four pack. Limit 1 case per person, limit subject to change.
Jupiter is known as the Roman god of lightning. It’s also the city in Florida that Civil Society calls home. Around the time we were working out logistics for Karl’s visit to collab, a customer named Matt Pfisterer snapped an awesome photo of a lightning bolt over our brewery and the name Beard of Jupiter was born.
Beard of Jupiter (8.0% ABV DIPA) pours a hazy gold tangerine color releasing aromas of tropical fruit and citrus with flavors of tangerine, melon, assorted tropical fruits, earth and passionfruit with a very strong EQ juice finish.

A new batch of MC² will also be released this weekend. $18 per 4-pk, Limit 1 case per person. This batch is very similar to the last one and features a super juicy finish.

Photon and Mmm…Osa this Saturday!🍊

This Saturday 10/13 from 11:30AM-6PM at the brewery along with New York State Of Mind we will be selling cans Photon and Mmm…Osa, both at $14 per four pack. Limit 1 case per person for each beer.
Photon (4.8% ABV) is our light and crushable American Pale Ale loaded with pacific northwest hops. It pours a very hazy orange, releasing well-blended notes of apricot, tangerine, peach, mango, and pineapple. It tastes of soft juicy tropical fruits, hop resins, and a hint of biscuit.

Mmm… Osa (4.8% ABV) is our beloved Photon American Pale Ale conditioned on freshly zested oranges at a rate of 6 oranges per barrel. It is everything photon is, with a dominant orange presence; this citric delight is our preferred way to start the afternoon.

New York State of Mind

This Saturday 10/12 from 11:30AM-6PM at the brewery, we are happy to introduce one of our two collaborations brewed here in Middletown with 3 Sons Brewing Co., New York State Of Mind (8.0% ABV DIPA) at $20 per four pack. Limit 1 case per person, limits subject to change.

After brewing with Corey a few weeks ago, we took him to some of our favorite N.Y. spots including breweries, distilleries, pizza shops and sites. Corey was originally born and raised here in New York, so the grind, hustle, attitude and ambition is something we all love. New York will forever be in our hearts and souls no matter where we go. With that said and Nas’ N.Y. State Of Mind collectively being one of our favorite songs the beer practically named itself.

New York State Of Mind features one of Corey’s favorite hops, Eureka. Along with a familiar supporting cast of hops, the beer has aromas of citrus, dank earth, and cannabis. It has flavors that bursts with notes of tropical fruit, citrus, pine and resinous earth with a finish of our EQ Juice you experienced in Straight Outta The Laboratory.

Straight Outta The Laboratory!

This Saturday 10/6 from 11:30AM-6PM at the brewery along with dHop 15, we are happy to introduce the first beer in a new series, Straight Outta The Laboratory (10.2% abv TIPA) at $22 per four pack. Limit 1 case per person, limits subject to change.

We love science and we have been feverishly working in the lab to bring you our most recent achievements. We started with the Straight Outta Middletown grain bill, supersized the citra portion, applied our latest and greatest technology (think of the EQ juice in raining belma and last batch of MC2) and ended up with January Fluctuation on steroids with the most amount of EQ juice to date.

Straight Outta The Laboratory pours a hazy bright tangerine and has aromas of freshly squeezed citrus, lime, grapefruit, and a tropical character that makes actual tropical fruit green with envy. The flavor is explosive with notes of bright tropical orange juice, mango smoothie, and dank grass. It’s resinous and chewy with an escalating brightness and a just a touch of residual sweetness balanced by a soft bitterness. We are particularly proud of this beer as it’s the culmination of months and months of hard work (since January Fluctuation).
To celebrate this new series we are also selling a limited number of matching glasses. The glass is a stemless 14oz Rastal Harmony with a half wrap design featuring the SOTL artwork we will use in this series. Limit 1 PP, $10 each.

This Saturday 10/6 from 11:30AM-6PM at the brewery, we are happy to introduce dHop 15 (8.2% ABV DIPA) at $20 per four pack. Limit 1 case per person, limits subject to change.

As we continue to experiment with hop combinations, we introduce Enigma for the first time in the dHop series along with a supporting hop bill. dHop 15 pours an opaque bright yellow and has an aroma of melon and light tropical fruits. Upon tasting, we get notes of white wine, earthy dankness, papaya, orange creamsicle and tropical fruit with and a very pronounced escalating brightness we like to call “EQ Juice”.

Juice Alert: Collectively, our favorite batch of MC² to date is coming at you this weekend. See below.

This Saturday, 9/29 from 11:30am-6pm at the brewery along with Control Volume, we will be selling cans of Photon and MC².
Photon (4.8% ABV) is our light and crushable American Pale Ale loaded with pacific northwest hops. MC² (8.0% ABV) is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. MC² tastes like succulent mango juice loaded with chewy hop resins. On finish, this batch nails the EQ Juice we have been applying to our beers and we are thrilled with the outcome. $18 per 4-pack, 1 case limit per person.

Control Volume!

This Saturday 9/29 from 11:30AM-6PM at the brewery, we are happy to introduce Control Volume at $20 per four pack. Limit 1 case per person, limits subject to change.

A mathematical model uses a system of equations to simplify and represent reality. It allows for the identification and optimization of important process to achieve a desired flavor profile faster than trial and error alone. To construct a mathematical model, you must identify your Control Volume and the relevant mass fluxes. This will govern how concentrations evolve over time and ultimately yield the final concentrations in the glass that drives the flavor profile.

Control Volume (8.1% ABV) is the first release in a mini series that will help us upscale and apply the small scale discovery we announced with dHop14. Based on the the preliminary modeling efforts, we’ve tried a new yeast strain for the first time based on certain properties and ran it through our evolving process. Control Volume pours a glowing tangerine color. It’s highly aromatic releasing notes of fruit punch, citrus, orange, and slight bubblegum. The taste follows the nose with a soft juicy mouthfeel and firm bitterness for balance.
