Energy Equals

This Saturday 06/01, starting at 11:30am at the brewery, we are happy to bring you Energy Equals (8.0 % ABV DIPA) at $18 per 4-pk, limit 1 case per person. Limit subject to change.

Energy Equals is a companion beer to MC². It completes the equation. Aside from debuting some awesome artwork from local illustrator, @juliagreenartistwhosings, we wanted to start with MC² as a base as it’s the beer we know best and incorporate new process techniques from dHop16, Imperium, and Experimentum as a comparison to see how these process tweaks would manifest and play out. Energy Equals has enhanced flavor characteristics of mango, pineapple, citrus, and apricot. With the new technique in place, we notice a much deeper flavor profile while being extremely bright and lighter in body. It’s extremely crushable with our #EQjuice finish. For science, we will also have MC² available for a side by side comparison.

dHop17

This Saturday 06/01, starting at 11:30am at the brewery, we are happy to introduce dHop 17 (8.5 % ABV DIPA) at $20 per 4-pk, limit 1 case per person. Limit subject to change.

Using your data and feedback, dHop 17 is an experimental beer that pulls what you loved best from Imperium and Experimentum to combine it into one beer. Taking the juiciness from the Imperium process along with the softness and bright aroma of Experimentum, dHop 17 pours a hazy bright yellow with bright aromas of assorted tropical fruits led by passion fruit and pine. The flavor matches the aroma with an incredibly soft and light body, a balanced bitterness to enhance its drinkability, and ends with our signature#EQjuice finish.

Fractal Enigma

This Saturday 5/25, starting at 11:30am at the brewery, we are happy to introduce Fractal Enigma (6.8% ABV DIPA) at $16 per 4-pk, limit 1 case per person. Limit subject to change.

Fractal Enigma investigates the interplay between Enigma and our revised hopping processes.

A fractal is something simple at the core yet can produce wonderful and amazingly complex results. We use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Engima pours a hazy yellow releasing complex aromas of white wine, peach pits, bright grass, berry, and earth. The taste follows the aroma with a resinous creamy mouthfeel and a firm but rounded bitterness.

Breaking Enigma

This Saturday 5/25, starting at 11:30am at the brewery, we are happy to introduce Breaking Enigma (8.5 % ABV DIPA) at $20 per 4-pk, limit 1 case per person. Limit subject to change.

Cracking the very cryptic Enigma Code was an important moment in world history. Here, we try to do the same on a brewery level with a hop some refer to as the chameleon hop, Enigma. Using different methods during the dry hop we work to pull out unique flavors you may not find using standard techniques.

Breaking Enigma uses wheat and oats as a grain base and is then heavily hopped with Enigma and a touch of Citra for balance. This beer pours bright yellow and has aroma of tropical fruit, berry and stone fruit. Upon tasting, we get assorted berries, tropical fruit, citrus, and a touch of Pinot Gris. The beer is resinous with a great blend of #EQjuice and dank earth at finish.

Barrel Aged Unlikely Foragers

This Saturday 5/25, starting at 11:30am at the brewery, we are extremely excited to release the first beers from our barrel aged farmhouse program and the first beer we all brewed together: Barrel Aged Unlikely Foragers. There will be three BA variants: Chardonnay, Sauvignon Blanc, and Gin and along with bottles of the matured base beer for sale. We feel these farmhouse ales are the finest examples of farmhouse ales we’ve brewed to date.

Chardonnay: 375 ml, Limit 3pp $13

Matured Base: 750 ml, 4pp $12

We want to kick off our BA farmhouse program with a beer we all brewed together. We took last year’s Unlikely Foragers and entrusted it to select wine and spirit barrels allowing it to slowly undergo its biological metamorphosis by our microorganisms and abiotic harmonization of oak, wine, spirit, and beer. The resulting ale is delicate and beautifully balanced with layered flavors of restrained acidity, lovely funk, hay, floral bouquet, and oak with each distinctly representing their respective host barrels ranging from an elegant chardonnay to a blast of gin. The mouthfeel is coating and creamy with a medium body that is gentle and soft, fully dry, and a finish that is lightly tart.

Please do NOT drink this beer after a pastry stout aged on thai food. Enjoy its elegant complexity with a clean palate. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Shook Ones

This Saturday 5/18, starting at 11:30am at the brewery, will be selling cans of Shook Ones (8.0% ABV) at $20 per 4-pk, 1 case per person (limit subject to change).

This beer was brewed as a reminder to us all to promote unity in the beer community and also to not take things too seriously. Beer is fun. We’re all friends. Some things are not funny and are taken too far. Even the biggest, toughest people, are in fact a little shook at some level. As a community, we should focus on enjoying each other’s company and share amazing beers from all over the world. Time is the most valuable thing we have, so please don’t waste it social media fighting. RIP Prodigy. 

Shook ones is a blend of three of our favorite hops with an intense rate of kettle and dry hop additions. It’s pours bright yellow and has a taste of mixed tropical and citrus fruits, candied orange, underlying dankness, with a hint berry. It finishes smooth due to the use of oats and white wheat. This new and improved batch also showcases our#EQjuice.

This Saturday 5/18, starting at 11:30am at the brewery, we are happy to introduce our first of a series of collabs with Mostra Coffee, Rho (10.0% ABV Imperial Coffee Stout) at $14 per bottle, limit 6 bottles per person. Limit subject to change.

In Science, the symbol most often used for density is ρ (the lower case Greek letter Rho). We used a brand new grain bill to create a stout with a dense mouthfeel and a dialed back bitterness. To help elevate this into a coffee stout, we worked closely with Mike and the experts at Mostra Coffee. Mostra Coffee is an artisan micro-roasting company that sources, roasts, brews, and serves only high-grade specialty coffee. Mostra was recently named a top three finalist for Roaster of the Year 2019 from Roast Magazine, and won Best Original Cold Brew and Best Signature Cold Brew at the Cold Brew City Competition.

Collectively, we chose a unique washed single origin ‘Colombia Tolima’ coffee, which has notes of mulling spice, apple, and hints of milk chocolate throughout.

Rho pours jet black with a saturated caramel colored head. This coffee created an extremely integrated and well-balanced beer. Its aroma is dark chocolate, caramel apple, cinnamon and clove, fresh coffee, dried fruit, and leather. The taste is a milky dark chocolate, dried cherries, hints of vanilla, and a lingering coffee backbone with light bitterness. It is silky, creamy, viscous and its flavor is reminiscent of an affogato dessert.

Mmm…osa (4.8% ABV) is our beloved Photon American Pale Ale conditioned on freshly zested oranges at a rate of 6 oranges per barrel. It is everything photon is, with a dominant orange presence; this citric delight is our preferred way to start the afternoon. $14 per four pack, limit 1 case per person.

Photon (4.8% ABV) is our light and crushable American Pale Ale loaded with pacific northwest hops. It pours a very hazy orange, releasing well-blended notes of apricot, tangerine, peach, mango, and pineapple. It tastes of soft juicy tropical fruits, hop resins, and a hint of biscuit. $14 per 4-pack, 1 case limit per person.

Middletown Waves

This Saturday 05/11, starting at 11:30 AM at the brewery, we will be introducing Middletown Waves. $22 per four pack, limit one case per person.

Middletown Waves (10% ABV) takes one of our favorite triples, Straight out of Middletown,
and adds a balanced amount of lactose and a heavy dose of oats showcasing an even thicker and creamier finish. With the mosaic and citra hop bill still being the star of the show, it pours a very murky tangerine color and releases aromas of fresh squeezed orange juice and earthy grass. The taste is resinous dank-citrus, light pine and orange push-pops. It has a rounded bitterness and a chewy but creamy mouth feel. The #EQjuice finish is very prominent and this beer drinks like a juicy orange creamsicle. Think dHop 2 supersized with a luscious orange sherbet finish.

Blueberry Boy

Thank you to Evil Twin Brewing NYCHimmerigetand Brasserie Cantillon for welcoming us to be part of what’s is being affectionately called Team Blåbær or this fun and exciting day. ‪On Blåbær day, Thursday 5/09 at 4 PM, at the brewery, we are happy to make our April Fools ‘Joke’ a reality by bringing you our collaboration with Evil Twin NYC, Blueberry Boy (11.0% TIPA). $22 per four pack, limit 1 case of each beer, per person. Limit subject to change.‬

‪Blueberry Boy is the first beer of its kind to come out of Equilibrium. It’s an idea we came up with during a visit with Jeppe, found it hilarious, and felt it was the perfect way for hopheads to celebrate the annual Blåbær release on home turf. This TIPA was aggressively hopped with Mosaic and Belma, and conditioned on blueberries with a touch of lactose. Blueberry Boy pours a vivid fuschia color and has an aroma of fruity citrus, blueberry skin and an earthy minerality. The flavor is citrus, blueberry flesh and earth and even finishes with our EQ juice. The body of this beer flows freely and makes it extremely crushable for a fruited triple. It has a pointed bitterness but a very smooth finish and the blueberry is the last thing you taste as you go in for another sip‬.

Tickets start and taps open at Noon in our taproom. For the occasion, we will also have vintage bottles of TABA Blueberry for on-site consumption. Lastly, If you’re in Copenhagen, Himmeriget will also have cans to go during the Blåbær release on 5/9 along with a bunch of Equilibrium beer on tap for the big day. Keep an eye out, we’ll be there hanging out!
