Using an increased hop rate, this Fractal investigates the interplay between a new hop combination, Citra and Idaho 7, and our revised processes.
Fractal Citra/Idaho 7 pours a bright and resinous yellow releasing complex aromas of citrus and melon. The taste follows with additional citrus, peach flesh, cantaloupe, zesty lime and assorted berries with an earthy pine backbone. This beer is creamy but firm with rounded bitterness.

Elemental Gorilla is part of the Bottle Logic Trilogy we hope to bring you every 24 months. Using our own Vanilla Gorilla as the muse for this beer, we continued to build on the idea to focus on the basic Elements of a massive Imperial Stout: Barrel, cat-like patience, and focused adjuncts. The same giant base of Binary Elements was allowed to sit uninterrupted in Willet barrels for 18 months with the addition of Vanuatu vanilla beans. Grown on the southernmost island of the Vanuatu archipelago in the South Pacific, these wonderful and extremely rare vanilla planifolia beans give unique and strong notes of cookie dough and cocoa.
Elemental Gorilla with Vanilla pours pitch black with a deep tan head. Aromas and flavors of extreme chocolate chip cookie dough, bakers chocolate, and the most luxurious gooey vanilla fudge lead into a balanced barrel character of vanilla oak, light char, and complexity from the barrel in a chewy and sticky finish.

Ocean Physics spans from small millimeter-scale turbulence to big-scale global circulation (like the label) and even applies to fish tanks in your living room. For this beer, we payed attention to smallest detail while thinking of a big TIPA that you can enjoy in your living room and possibly in your fish tank if you have too many. Thanks Ocean Physics! We set out to make a triple as smooth as the most gentle ocean waves. Batch 2 of VitaminM(Sea)³ starts with a base of oats and wheat to help the beer remain soft and creamy before an even bigger hopping rate of Citra, Mosaic, Wakatu, and Galaxy than its predecessor. It pours a hazy and vivid bright yellow and has intense notes and flavors of assorted citrus, lemon & lime, and a dank and earthy lemongrass. It has big #EQjuice with an extremely soft smooth finish. It’s dangerously drinkable for a triple and will slip you into meditative state as you are reminded of the sounds of the sea as the ocean boost your brain power… or helps you drink in a fish tank.

Batch 3 of Can It Be All So Simple arrives today. Revisting this beer in its OG form, we turned off the EQjuice and brewed it just like the first time around. Using our Hand Selected Galaxy and Mosaic hops, we generously upped the hopping rate of previous batches so this beer sings. Pouring a hazy and quite vivid yellow, CIBASS releases bright notes of Dole pineapple juice, tropical citrus, and blueberry with an aroma that mirrors the balanced and drinkable taste.

Originally dreamed up at Evil Twin NYC while talking with Jeppe, the conversation of hops, marshmallows, and what if’s started us off with a test batch of Straight Outta The Marshmallow Laboratory. It was served both at Equilibrium and Evil Twin and after some great feedback and slight tweaks to the original recipe we decided to package it.
This batch features an increased hopping rate of our hand selected hops and we worked hard to really integrate the marshmallow flavor with the tropical notes from the hops while reducing the marshmallow sweetness in a revised process from the pilot batch. We are really happy with the result. SOTML pours a hazy orange and notes of orange marshmallow creamsicle immediately fill the air when cracked open. The flavor follows with bright tropical fruits infused with pillowy marshmallow and creamy vanilla notes. The beer finishes soft and velvety with a beautiful #EQjuice profile.
