This Saturday 02/29, starting at 11:30am at 2 South Street, we are pleased to brining you the first in a series, Barrel Aged Austin Sauvignon Blanc (6.5 % ABV Farmhouse Ale). $20per 750ml // Limit 1pp and $11 per 375ml // Limit 2pp. Limits subject to change.
Austin starts off as a delicate, and complex farmhouse ale with a bit of pleasant funk and gentle acidity. We took one of our most balanced farmhouse ales yet, and let it rest in the Sauvignon Blanc barrels that previously held Unlikely Foragers for a little over 10 months. It’s since rested over a year combined in both barrels and bottles. The metamorphosis is beautiful producing a delicate and layered flavor, lovely funk, light hay, floral grape notes with a kiss of sweet fruit and a underlying oak character with each sip. This ale is gentle, soft, and dry with a beautiful creamy aspect to its body and a tongue clique tart finish. We are really proud of this one as it points to where our barrel aged program is headed. Look for more iterations in the coming weeks. BAASB will continue to evolve over time if properly cellared.

Dream Wave Fluctuation

We are bringing back the first lactose beer we ever did just in time for Pastrytown. We kept EQ’s fluctuation grain bill and added oats and lactose in-line with Other Half’s Dream treatment. This beer was followed by an aggressive dry hop of Galaxy and Citra. Dream Wave Fluctuation pours a hazy glowing tangerine color releasing aromas of passion fruit, peach, lime sorbet, melon, lactose, and pineapple all integrated with a juicy twist. The taste is a smooth, bright, extra creamy, and a tropical wave of flavor with a touch of sweet that finishes with an enormous #EQjuice profile making this batch even more dangerously drinkable and balanced. One of our Brewers, OG Kyle says this batch is the 🐐! If you know OG, you know he doesn’t mess around!

2Sigma

We are back with another distribution in the series with the mean set equal to that of Straight out of the Laboratory. 2Sigma is the second standard deviation above the mean which builds on the SOTL base and adds our now standardized Energy treatment and a balanced addition of Lactose. There will be more Sigmas in the future, as we explore additional deviations from our SOTL base.
2Sigma pours a very hazy yellow color with an explosive creamsicle orange nose. We find flavors of a Caribbean fruit stand with guava, melon, passionfruit, mango, and pineapple all in a creamy push pop form. The mouth feel is luscious and creamy while the beer ends with our signature #EQjuice finish.”
Barrel Aged Swiss Bliss

As with all BA releases, we will not be holding any back for Monday sales.
When Brandon came to visit almost a year ago we added an Imperial Stout to select Buffalo Trace barrels. While he was here, he told us about one of his favorite coffees from home in Richmond, VA; a Swiss Chocolate Almond roast that he loves drinking and the idea for Swiss Bliss came to light. 11 months later we chose, and for the first time at EQ, blended three barrels before treating the beer with Rostov’s Coffee Swiss Chocolate Almond Coffee, Almonds, and Marshmallow. The result is a beautifully decadent brownie stout laced with a rich nutty flavor from the almonds and a slightly sweet magical marshmallow finish with just enough coffee to cut through any sweetness. The barrel characteristic offers a beautiful caramel finish and this beer drinks like a bowl of rocky road ice cream. 🔥🐕

A wavelength is the distance between identical points in the adjacent cycles of a waveform signal propagated in space and describes the flow of Photons
We started with oats and white wheat for a base before adding Simcoe and Mosaic to the whirlpool. To get some berry medley notes going we dry hopped with Mosaic and Citra at a 2:1 ratio. Wavelength pours bright yellow with aromas of citrus and stone fruit with crushable flavors of mango and berry with a light refreshing finish.
Super Fractal Koru Set

The Koru is a New Zealand Māori term for a spiral shape that constantly evolves to symbolize new life and growth and resembles a fractal set. After thoroughly enjoying Super Fractal Phoenix Set, we wanted to grow Super Fractal as a series using hops exclusively from New Zealand and the Super Fractal Koru Set was born. Scaled up 3x from Fractal, we used a super simple grain bill of 2row and our specific fractal fermentation profile before intensely hoping it with Nelson, Motueka, Waimea, Rakau, and Wakatu.
Super Fractal Koru Set pours a vivid hazy yellow with an aroma of tropical citrus and lime. The flavor is bright candied orange peel, black currant, and white grapes with a light lime finish. This is a crazy one with some intense fruit tones. This beer is extremely aromatic and crushable with a big #EQjuice profile that might just leave you seeing beautiful and spirals shapes yet again.

We revisited the Wave treatment with one of our favorite beers by paying tribute to the other side of the MC² relationship with energy. Energy Wave takes the MC² grain bill, increases the hops, and adds a touch of lactose. Energy Wave pours a glowing hazy tangerine color, releasing bright tropical notes of mango, pineapple, lactose, and apricot. Energy Wave tastes like a succulent wave of creamy mango juice with a touch of sweet that is dangerously drinkable and balanced.

on February 13, 2020 No commentsThis Saturday 02/15, starting at 11:30am, at 2 South Street we are excited to offer Batch 2 of Barrel Aged Special Relativity 1 at $20 per bottle. Due to the very limited yield out of this single barrel, limit is set at 1 bottle per person. We don’t expect these bottles to make it into Sunday and we will not be holding any back for Monday.
Special Relativity is a special case of General Relativity, which focuses more on time (and space) as opposed to gravity. For Batch 2 we chose a barrel from Buffalo Trace Distillery, where BASR1 sat for 11 months to add notes of charred oak, light vanilla and mild caramel to create a harmonious and synergistic balance. This beer opens up with strong notes of oak, bourbon, char, and bittersweet chocolate, with a slight touch of coffee. Its flavor follows the aroma with a full viscous body and a smooth chocolate-bourbon palate linger that lets you enjoy the transition time between sips as it warms your soul. This beer should be served near room temperature (~68 F) to enjoy the bouquet of complexity that went into its creation. This beer will cellar well at proper temperatures (55 – 65 F).

E=MC², and C is the universal symbol for the speed of light. We based this beer off of our beloved Photon pale ale but amped up the hop ratios and gave this beer our Energy treatment. This method improves aroma, enhances flavor and body by pulling the most out of from each hop.
C pours a bright straw yellow and has a beautiful nose that wafts up as soon as the can is cracked open. Balanced and luscious, it has deep flavors of stone fruit, mandarin orange, pineapple, and mango thanks to the increased hopping rates. You’ll notice a super soft crushable mouthfeel and a finish that builds up and exits at the speed of light.
Shared Space Guava and Passionfruit

With Equilibrium Brewery focusing on the liquid, and @eqbonfire focusing on the food, our Shared Space will be a junction of good beer, good eats and most importantly, good people. A sense of community and belonging is something we pride ourselves on here and we are happy to introduce our second iteration of the series to commemorate that.
Shared Space Guava and Passionfruit is a blended wild ale brewed and copious amounts of Guava and Passionfruit. We started off brewing two separate bases that could be thought of as cousins of Austin and TABA before conditioning it on more than 3.5 lbs of fruit per gallon and adding additional strains of Brettanomyces. It pours a beautiful golden yellow and has an intoxicating aroma. Shared space GPF is incredibly complex with a tart tropical flavor supported by a gentle tartness and very balanced acidity. This beer is tasty right out of the gate, but will continue to evolve in proper cellar conditions.
