Falcons & Felines

This Saturday 09/28, starting at 11:30AM at the brewery, we will be selling bottles of our next collaboration with @horusagedales, Falcons & Felines (7.0 % ABV). $13 per 375ml bottle. Limit 2 bottles per person, limit subject to change.

We released the Vanilla Gorilla back in March of this year. We were left with a single Hill Rock Bourbon Barrel filled with hand-cut Madagascar Vanilla Beans. Around the same time, we were packaging Peregrinas, our peach Farmhouse collab with Horus Aged Ales. You know what goes well together? Peaches, Vanilla, and Bourbon. We refilled the Vanilla Gorilla barrel with Peregrinas and allowed this complex concoction to harmonize for several months before naturally carbonating this beer. The result is a very complex beer that captures summers transition into fall with tart grilled summer peaches, cream soda, funky oak, and transitions into a vanilla bourbon finish perfect for cooler fall weather. We also found that Falcons and Felines has an amazing interplay with food summoning different sensations depending on the other palate companions. The beer has been conditioned for several months, is unfiltered, naturally carbonated and will continue to evolve over time if properly cellared.

TABA Mango Lime!

This Saturday 09/21, starting at 11:30 am at the brewery, we are happy to introduce a new variant of There and Back Again series, TABA Mango / Lime (6% ABV). $16 per bottle limit set at 6 bottles per person, limits subject to change.

There and Back Again is a tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This American wild ale is a collaborative effort with our dear friend Dr. Jason Rodriguez. We took our house “honey badger” mixed culture (no saccharomyces) and allowed it to ferment and sour over several months before refermenting it on both mango and lime. The result is a bright and clean island mango and zippy lime explosion boosted by the tropical expression of our microorganisms.

Think of an 80’s candy mash up of Nerds, tropical fruit flavored Sweet Tarts, and Pop Rocks. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared

Solar Fluctuation

This Saturday 09/21, starting at 11:30 am at the brewery, we are happy to introduce the first of three collaborations with @homagebrewing, Solar Fluctuation (8.5% ABV DIPA). $20 per 4-pack, limit set at one case per person, limits subject to change.

When Matt was in town we sampled some of our hops with him and Fluctuation seemed to be one of his favorites. We spoke about amping it up to something we’ve never done before, without deviating too much from the flavors we love.

Solar Fluctuation takes one of our favorite beers, ups the hop game, and gives it our energy treatment process. The results were huge. Solar Fluctuation has very enhanced fruit notes of mango, pineapple, and lychee with an extremely smooth mouthfeel and a super bright and cosmic finish. If you liked the EQ Juice finish on MC³, we think you’ll love what we did to this one.

To keep the space theme going, keep an eye out for one more can made with our friends from Pomona releasing in the next few weeks. We’re doing this release in series because solar fluctuations cause…??

Harvester of Simcoe!

This Saturday 09/14, starting at 11:30am at the brewery, we are happy to bring back Harvester of Simcoe! $20 per 4-pack, limit set at one case per person, limits subject to change.

Harvester of Simcoe (8.8% DIPA) has aromas of passion fruit, bright pine, berry and earth, followed by some bready notes. The taste is light pine and tropical fruits supported by a firm but rounded bitterness. This batch ends with an extra bright EQ juice finish.

dHop5!

This Saturday 09/14, starting at 11:30am at the brewery, we are happy to announce the return of dHop 5! $20 per 4-pack, limit set at one case per person, limits subject to change.

dHop 5 is a 8.5% DIPA that supersizes one of our favorite Equilibrium IPAs: Fractal Citra/Galaxy. We scaled Fractal’s grain bill, water treatment, fermentation, and super sized the hop bill of citra and galaxy. dHop5 pours a milky straw yellow (milk>haze) releasing aromas of passion fruit, peach, lime, and pineapple all integrated with a sorbet twist. The taste is a bright creamy tropical flavor that is dangerously drinkable with our signature EQ Juice finish.

Energy Evolution…

This Saturday 09/07/19, starting at 3 pm at the brewery, we are excited to bring you cans of Energy Evolution (10.5 % ABV TIPA). $22 per 4-pk, 1 case pp, limit subject to change.

It seems fitting to symbolize the series of beers we’re calling “Energy Evolution” with a single beer itself. We started by supersizing the grain bill and hop bill from the literal definition of Energy: ENERGY EQUALS MC², and went beyond, double dry hopping it by adding in a ton of galaxy to the existing MC² hop bill and running it through our energy dry hop (see the theme of the 9/7 yet?). To round out this final beer of evolution, we added a touch of lactose for smoothness.

Energy Evolution pours a bright hazy yellow and has big flavors of candied pineapple, citrus fruits, and soft melon notes throughout. The mouthfeel is smooth and creamy with a touch of sorbet and an escalating brightness from our #EQjuice. Another game of charades here, virtually undetectable booziness for a beer this size making it extremely easy to drink, possibly tricking the smartest people out there, but maybe not Einstein, the man we pay homage to this weekend.

MC³

This Saturday 09/07/19, starting at 3 pm at the brewery, we are happy to bring you something we have been working on for close to a year, MC³ (cubed) 10% ABV TIPA. $22 per 4-pk, 1 case pp, limit subject to change.

The evolution is here and we are excited to bring it to you. MC³ breaks the laws of physics and implodes reality. Our flagship DIPA ‘MC²’ is photon’s hopping rate SQUARED, this TIPA is photon’s hop bill CUBED. Where Photon explodes into a rainbow of flavors, our first ever Double Whirlpool (DW) creates a rainbow of flavor that gets focused back to a singular stream of deliciousness as the next step in this energy evolution. This unique DW works synergistically with the appropriate Energy DH treatment.

MC³ is basically MC² on the maximum permissible dose (MPD) of steroids. Extremely bright citrus, big mango, and assorted melon aroma and flavors. A dense hop saturated mouthfeel from our Double Whirlpool coats the tongue and our EQ juice is amplified by our Energy dry-hop methods to near cosmic boom levels.

This Saturday, we’ll also have Energy Evolution Series glasses for sale as well. Side one features our EE logo, while side two has the variables for the evolution of our energy series: C¹, C², C³. In Physics C or C¹ is the variable used for Photon. This then gets squared in the famous equation Energy Equals MC² and it takes its next leap in MC³. When you add these up in your belly the mathematics are known as a “power series” with enough energy to give you a good hop buzz. These come is metallic gold ($12) or Cosmic Blue ($10).

Photon, MC², and Energy Equals!

This Saturday 09/07/19, starting at 3 pm at the brewery, we are happy to offer three of our flagship beers debuting their new look; Photon, MC², and Energy Equals.

Photon (4.8% ABV) is our light and crushable American Pale Ale loaded with pacific northwest hops. It pours a very hazy orange, releasing well-blended notes of apricot, tangerine, peach, mango, and pineapple. It tastes of soft juicy tropical fruits, hop resins, and a hint of biscuit. $14 per 4-pack, 1 case limit per person. Limit subject to change.

MC²(8.0% ABV) is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. MC² tastes like succulent mango juice loaded with chewy hop resins and a bright EQ juice finish. $18 per 4-pack, 1 case limit per person. Limit subject to change. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Energy Equals (8.0 % ABV DIPA) is a companion beer to MC². It completes the equation. We start with MC² as a base and incorporate the well received process we like to refer to as the ‘Energy Dry Hop’ which gives this beer an intense brightness and flavor. Energy Equals has enhanced flavor characteristics of mango, pineapple, citrus, and apricot. With the new technique in place, we notice a much deeper flavor profile while being extremely bright and lighter in body. It’s extremely crushable with our EQ juice finish. $18 per 4-pack, 1 case limit per person. Limit subject to change.

Infinite Skills Create Miracles

Keeping the Gang Starr theme going, we bring you the companion beer to Above the Clouds (DIPA): Infinite Skills Create Miracles (TIPA). We used a tremendous amount of oats and wheat to start, but scaled things way up to a triple. Using a similar base blend of Citra and Idaho 7 for the whirlpool, we switched things up using Galaxy and Nelson for the dry hop. This beer doesn’t contain any lactose, but you wouldn’t know it by how soft and creamy it is. It pours bright yellow with a fruity aroma. The flavors are a mash up of Southern hemisphere island fruit papaya, mango and pineapple but with a touch of green seedless grapes. It’s extremely fluffy and creamy and the abv is well hidden in our #EQjuice finish.

Above The Clouds

This Saturday 08/31, starting at 11:30am at the brewery, we will be selling cans of Above The Clouds (8.0% ABV). $20 per four pack, Limit 1 case per person, limit subject to change.

If you walk onto the brew floor any given day, you’ll likely hear the guys playing a lot of late 90’s to early 00’s NY hip hop. Around 2 weeks ago we were brewing this still unnamed beer while “Above The Clouds” by Gang Starr was playing. Considering the recipe and style of what was cooking, we thought it would be a good nod to name it after the song playing and from one of our favorite groups around here.

Above the Clouds uses a heavy oat base and a whirlpool blend of Citra and Idaho 7. We then dry hopped it with Citra and the largest dose of Nelson to date and just a touch of lactose to really elevate its already velvety feel. It’s pours an opaque bright straw yellow with flavors of mixed citrus, a touch of sweet pine, gooseberry and faint notes of white wine grapes. The Nelson hops are showcased well and we find the flavors deep and complex while the #EQjuice finish is smooth and velvety thanks to our hopping processes.
