Enso

This is a very important beer to us. The Enso circle is our Brewery’s logo and is a symbol of balance, creation, and life. The impossible task of hand drawing a perfect circle creates the imperfections and details that exactly make the Enso beautiful. The beauty of imperfection is what drives us to develop, grow, innovate, and improve in a quest for balance and perfection. We could think of no better symbol to represent our work as a craft brewery as we share our journey and our path while we strive for balance and amazing beer. We’re thrilled that you take this journey with us.
We took aspects of our favorite past brews and integrated them to express a single manifestation of Equilibrium. Enso takes the grain bill and fermentation of dHop5, uses a hybrid Citra/Galaxy hopbill of dHop5 and Dreamwave Fluctuation, a touch of lactose like Dreamwave Fluctuation, and applies our energy treatment.
Enso pours a beautiful milky bright yellow with aromas of passion fruit, assorted citrus, pineapple, and sorbet. The flavor has bright notes of passion fruit, melon, and peach all coming together in a creamy lime push pop ending. This beer is soft and drinkable and ends with our signature #EQjuice finish in perfectly balanced form.

dHop1

Today at Noon (For 1PM or later pickup) we will be selling dHop1 (8.5 % IPA) at $20 per 4-pk (No Limit). We will have this available with options for curbside pickup at the brewery or delivery throughout New York, Washington D.C., Ohio, Nevada, New Hampshire, and Vermont!
Our first dHop ever is back! dHop is our DIPA series that investigates how changing different aspects of hops changes our DIPAs, which will allow us to optimize our hops and hopping procedure. dHop1 is our 8.5% DIPA with an intense mosaic forward hop bill. Applying what we’ve learned from this series, we were able to pull a very bright and tropical dank mosaic. It pours a very lively tangerine color, releasing notes of cannibis, bright citrus, tropical melon, and just a touch of dank earth with notes of blueberry on the finish. The taste is a juicy piney tropical melon, with dank layers of blueberry resins that roll around the tongue making it extremely drinkable.

Fractal Riwaka/Citra

At 12PM today we will be selling Fractal Riwaka/Citra (6.8 % IPA) at $16 per 4-pk (No Limit). We will have this available with options for curbside pickup at the brewery or delivery throughout New York, Washington D.C., Ohio, Nevada, New Hampshire, and Vermont!
Fractal Riwaka/Citra investigates the interplay between one of our new favorite New Zealand hops and a tried and true classic. Fractal Riwaka/Citra pours a resinous-hazy-straw yellow releasing aromas of lemongrass, passionfruit, melon, and fresh cut kiwi grass. The taste is super soft with notes of citrus zest, passionfruit, and pineapple. We also get a light earthy berry with a peppery grass like finish. This beer is delicate and pillowy with a mild rounded bitterness. This is one of the most interesting Fractals yet, and perhaps our go-to!

Roowaka

Roowaka is the next beer based off of Pete’s hoppy travels to Australia. Another Kangaroo picture (Yup, we have plenty) graces the label. Roowaka celebrates our love of the South Pacific and shines light on the elusive New Zealand Riwaka and one of our Aussie favorites, Galaxy.
We started with a Fractal fermentation and grain bill. The hop schedule uses a Citra whirlpool before a heavy dry hop of Riwaka and Galaxy. Roowaka pours a straw milky yellow with an aroma of passionfruit, assorted citrus, earthy hay, grassland, and pinch of white pepper. The rollercoaster ride of flavor starts off with notes of earthy white pepper before being quickly transformed into pops of citrus, passionfruit, white grape with, melon, and a touch of berries. The juicy buildup continues before ending with a soft and creamy finish with a touch of bitterness.

Juice²

At 2PM today, we are selling Juice² (10.0 % TIPA), a collaboration with Great Notion Brewing at $22 per 4-pk (No Limit). We will have this available for pre-order with options for curbside pickup at the brewery or delivery throughout NY, D.C., Ohio, Nevada, and New Hampshire.
Following up on our last collaboration, Juice=Juice, the question had to be asked, what happens when you scale up a classic and increase its drinkability? We hopped on a zoom call with Paul and the Great Notion crew to discuss, life, brewing, and juice tactics. After ironing out some ideas and concepts and with help from Dr. Whoot and TIM the Beaver our equations were solved, Juice x Juice = Juice².
Juice² takes our classic, Juice=Juice, and scales up the grain bill and increases the Citra whirlpool and finishes it off with a massive galaxy to bring you this beer in a TIPA form while keeping it balanced and crushable.
Juice² pours vibrant hazy orange and has an aroma of fresh squeezed OJ and Peach gummy rings. The flavor continues with bold navel orange, mango, cantaloupe, and peach gummies with a balanced bitterness to leave you ready for the next sip. This beer is dangerously drinkable, a downright crusher, and will transport you right to the grove stand. Drink your juice responsibly!

Fluctuation Wave takes our beloved DIPA Fluctuation, supersizes the hop bill, adds a touch of lactose, and uses our revised hop process. The tasting notes for this are simple: This beer is the DIPA version of Straight Outta The Laboratory with even more EQ juice and a smooth lactose finish.

Climb The Ballmer Peak

The Ballmer Peak – Steve Ballmer of Microsoft discovered a correlation between cognitive ability, creativity, problem solving, and performance after you indulge in an alcohol beverage and are in the 0.129% – 0.138% BAC range. This sweet spot is known as the Ballmer Peak. When we had the pleasure of having JC from Trillium here, we talked about how much we loved the Ballmer Peak collaboration we brewed in Canton in back in 2019 (possibly mid-peak). Keeping the recipe similar, we wanted to revisit the beer that helped form precious moments, enhanced BBQ recipes, friendships, and of course delicious recipes. To help you obtain this experience, we will help you Climb the Ballmer Peak.
Climb The Ballmer Peak uses our Super fractal base and fermentation and is hopped exclusively with Citra. This TIPA pours an opaque bright orange and has an intense juice forward aroma of Mango, Passionfruit, Pineapple, and Rainbow Melon. We don’t know exactly what rainbow melon is, but we want to stay true to our emotional responses that occur while we Climb the Ballmer peak. Flavors and bright notes of deep navel orange, passionfruit, grapefruit and lime go along with a touch of berry and lychee. The EQ juice profile is extreme, and this beer can easily pass as a juice drink, although reaching your Ballmer Peak after just a few sips may say otherwise.

Fractal Lab Citra / Hop X

Available at noon on our website for preorder pickup and delivery throughout NYS, D.C., Ohio, and Nevada we have cans of Fractal Lab Citra / Hop X (6.8% IPA) $16 per 4-pk, No limit!
Fractal Lab is a new series with our simple fractal grain bill and expression of hop exploration. This series explores beyond simple hop expression and applies experimental techniques to hops we want to know better.
For this batch, we used a Citra whirlpool and a 100% dry hop of a new experimental New Zealand hop blend along with applying our energy process for the first time in a fractal-based IPA. Fractal Lab Citra / Hop X pours a beautiful straw yellow and gives off notes of earthy citrus and fresh cut New Zealand grass, passionfruit, and melon.
This iteration of Fractal Lab has flavors of bright mandarin orange, lemon, Anjou pear and fields of cut grass in a beautiful creamy mouthfeel with a touch of light bitterness.
A juicy IPA and a beer we recommend drinking at around 50° to allow all these hops to fully bloom and reveal their complexity.

Breakfast Time is Relative

At Noon today, we are selling Breakfast Time Is Relative (10% ABV) at $17 per 500 ml bottle. No Limit. We will have this available right from our website for pre-order with options for curbside pickup at the brewery or delivery throughout NY, D.C., Ohio, and Nevada.
The ideal time for Breakfast is whenever you want it! Breakfast Time is Relative is the base beer of the recently released Blåbærry Pancake Breakfast Stout. Conditioned with a blend of Vietnam and Brazilian coffee from Mostra, Catskill Mountain Sugarhouse maple syrup, and lactose, Breakfast time Is Relative pours pitch black with a happy mocha colored head while maple and chocolate fill the air upon pouring. Bakers chocolate and sweet maple are balanced by a beautiful coffee backbone with notes and flavors of doughy pancakes. The harmonious and well integrated flavor profile is fully viscous and thick and the body is wrapped up in a smooth dessert like finish. Truly breakfast in a glass.
This beer should be served near room temperature (~68 F) to enjoy all the flavors intended.
